Recipe Name: Paleolithic Chicken and Carrot Curried soup
You'll need: ½ tbs curry powder, 1 cup of diced chicken breast, 1 cup of chopped carrots, ¼ cup of chopped walnuts, ½ cup of coconut milk, 1 stalk of celery, 1 medium sized onion, 2 cups of water, 1 tbs olive oil and a dash of pepper.
Directions:
(1) Sauté celery and onion with olive oil. Next, you throw in the carrots and walnuts. Sauté these for several more minutes.
(2) Add chicken and then pour in 2 cups of water. You should cover and allow the ingredients to simmer for 10 to 20 minutes. Let the chicken and carrots become 100% tender.
(3) Now dump everything into a food processor, put in coconut milk and blend away until the whole thing becomes soupy.
(4) Finally, add curry powder, sprinkle some pepper and blend all over again.
